Breakfast for supper

Breakfast food is my favorite, so fairly often we have an “upside down” meal day, with breakfast foods for supper.

This berry crumble is so popular I couldn’t even get a photo before they dug into it.

Last night it was scrambled eggs, homemade waffles (beautifully executed by Middle Sister) and the world’s easiest recipe for mixed berry crumble:

2 16-oz packages of frozen mixed berries
1/3 cup flour
1/3 cup sugar

Crumble:
3/4 cup flour
3/4 cup oatmeal
2/3 cup brown sugar
1 tsp cinnamon                                                                                                                                     1/4 tsp salt                                                                                                                                             7 tbspn butter or margerine, melted

Toss frozen berries (don’t bother to thaw) with flour and sugar. Pour into a greased 9×13 pan. Mix up crumble and sprinkle on top. Bake uncovered for about an hour at 375.

    • I love that the crumble is so easy. I get one of the four pound bags of frozen berries from Sam’s, and that makes two batches. It’s a nice go-to when we’re hungry but not very ambitious. 🙂
