Through no fault of my own, my dinner menu plan for this week was thrown into a state of utter higglety-piggelty (pretty sure I’ve never typed that before). If you’re shaking your head at the obviously anal-ness of the fact that I have a weekly menu plan, I don’t blame you. But I hate going to the grocery store (details here) more than once a week, so I plan ahead.
At any rate, I’ve had to scramble to come up with something every night this week. Last night I gave up and we went to a new pizza place nearby. Pie Five. I don’t know if it’s a national chain, but if you can get to one, GO. NOW. It was the best pizza I’ve eaten in years. It’s set up like Chipotle – you choose everything you want, they pop into an oven for five minutes, and there you are. Kind of like if someone took Kramer’s “Make Your Own Pie” restaurant idea, injected a dose of common sense, and came up with a win.
But tonight I put my “make something out of nothing” skills into high gear and threw together something that resembled burritos…and they were fantastic! Already-browned ground beef quickly defrosted in the microwave, mixed with a packet of burrito seasoning, a can of diced tomatoes, a can of sliced black olives, and a giant portion of shredded cheddar – all stuff we had on hand. We also happened to have plenty of tortillas, some black beans, and a bag of salad we chopped up to throw on top. I even turned up some white Velveeta that we cubed and dropped on top of the assembled burritos.
Okay, it was a small victory, but after the truly dismal way this week started out, I’ll take ’em where I can find ’em.

Why, yes, you can! 🙂 It was such a pleasant surprise that they were really good, and a real feeling of accomplishment to pull it together without having to make a dreaded run to the grocery store!

I had to do the dreaded grocery chore today. I had 5 meals planned. I returned home without the main ingredient to three of the meals. Grr. That means another trip.

Small victories are still victories! And, oh, how I would love a burrito right now . . . though the only ingredient we have here for such things is salsa. Perhaps that’s for tomorrow here. 🙂

Ooh, is tomorrow your grocery shopping day? I always go on Friday mornings. Thankfully my daughter is going with me tomorrow – that always makes it bearable! Hope you get some burritos. 🙂
