How many ways can you cook a potato, really? Well, in last week’s paper I saw a recipe that looked interesting, and I tried it for dinner last night. I actually don’t remember what the paper named this one, but I’m calling it The Most Delicious Potato Ever:
Place a washed Yukon Gold potato on the bowl of a wooden spoon. Cut it into slices that don’t go all the way through, so that the slices stay connected. Melt some butter and brush it over your potatoes, making sure some goes between each slice. Sprinkle with sea salt and freshly ground pepper. Place on a foil-lined cookie sheet and cover with another piece of foil. Bake at 450 for one hour.
I figured it would taste pretty much like a baked potato. WRONG! These potatoes taste like a savory donut. Absolutely the most delicious potato I’ve ever eaten. Everyone in the family loved them, even the males, who generally complain when I serve baked potatoes. And each one is a perfect serving size. Give it a try!
