Today is The Husband’s birthday. In a happy coincidence, I also get the day off because the 4th falls on my regular day off…so I have plenty of time to make a birthday treat for dessert tonight.
I’m falling back to an old favorite – the best cheesecake recipe I’ve ever tasted. I got it from a friend while we were in college, and I dig it out of the recipe box most years for The Husband’s birthday. His brother and sister-in-law are hosting the birthday dinner, so I’ll haul the cheesecake along with us. Honestly, I don’t think my sister-in-law cares for this recipe (she’s one of those freaks who prefers cheesecake with lemon – YUCK!). But that’s okay, because she’s making a German chocolate cake and I don’t care for her cake, either. This way we’ll all be happy.
Best Cheesecake Ever
Mix in a bowl:
3 eggs, well beeaten
2/3 cups sugar
Two 8-oz pkgs cream cheese
1 tsp vanilla
Pour into an 8″ graham cracker crust. I’m way too lazy to make one myself, so I buy a pre-made one from the grocery store. Bake for 25 – 35 minutes at 350 F (until middle isn’t terribly jiggly – and I know that’s not very specific).
Cool for 5 minutes. Top with 1/2 pint sour cream mixed with 1 tsp vanilla and 3 TBSP sugar. Bake for another 10 minutes. Refrigerate until completely set.
Pretty fast and easy, and perfectly delicious topped with sugared berries or – my favorite – dark chocolate sauce.
